Niklas Kaviar is an independent Finnish food brand created from a shared passion for exceptional ingredients, gastronomy and the traditions of Finland. What began as an idea — combining outstanding Finnish roe with the unmistakable atmosphere of a traditional smoke sauna — developed into a product we wanted to share far beyond Finland. Niklas Kaviar carries that origin in every jar. Made in Finland. Made differently.
Niklas Kaviar was born from the meeting of two very Finnish things: exceptional fish roe and the smoke sauna. Instead of trying to imitate traditional sturgeon caviar, we wanted to create something with an identity entirely of its own. We began with Finnish rainbow trout roe and developed an artisanal preparation that combines careful selection, gentle curing and the subtle influence of the traditional smoke sauna.
The result became Niklas Kaviar. Created and produced in Finland, the brand began its international journey through Barcelona — one of Europe’s great gastronomic cities and a natural meeting point between Nordic ingredients and Mediterranean food culture. But wherever Niklas Kaviar travels, its identity remains firmly Finnish.
This is our interpretation of Nordic luxury: exceptional ingredients, genuine craftsmanship and nothing unnecessary.
Great ingredients rarely need complication. Niklas Kaviar begins with carefully selected Finnish salmon roe from the fishermen we know personally. The roe is gently salted and prepared by hand before a subtle smoke finish by one of Finland’s oldest traditions, the smoke sauna. A traditional Finnish smoke sauna is heated with carefully selectef wood without a chimney. During heating, smoke fills the sauna completely before being released, leaving behind its characteristic soft aroma.
We adapted this distinctly Finnish tradition to our roe-making process. Our aim is restraint. The smoke should sit quietly behind the natural flavour of the roe. The result combines the freshness and delicate salinity of premium salmon roe with an elegant hint of wood smoke. The result is a unique product with distinctive identity: Finnish roe. Finnish tradition. Niklas Kaviar.
Selected for Quality
The character of Niklas Kaviar begins long before the smoke sauna. Our Finnish rainbow trout roe is sourced from selected producers and chosen for its quality, appearance, texture and flavour. The selection process draws on decades of experience working with Finnish fish and roe. Once selected, the roe is handled carefully and salted with restraint.
Our objective is not to transform its natural character but to preserve it. Each pearl should remain distinct and delicate, releasing its flavour as it breaks on the palate. Only after this preparation does the roe receive the subtle smoke-sauna finish that turns it into Niklas Kaviar. The philosophy is straightforward: start with exceptional roe and interfere with it as little as possible.
Few things are more deeply Finnish than the sauna. And among Finland’s different sauna traditions, the savusauna — smoke sauna — is perhaps the most elemental. A traditional smoke sauna has no conventional chimney.
Wood is burned in a large stove and the smoke fills the room during heating. Once the sauna reaches temperature, the fire is allowed to settle and the smoke is ventilated away. What remains is warmth and a characteristic, beautifully restrained aroma of wood and smoke. That aroma inspired Niklas Kaviar. Our roe is gently exposed to the character of the smoke sauna as part of its artisanal preparation.
The purpose is not conventional heavy smoking with accompanying bitterness. We are looking for something much more subtle: just enough smoke to add depth while allowing the clean flavour and delicate salinity of the roe to remain at the centre.
It is our signature and the element that connects Niklas Kaviar unmistakably to Finland.
Niklas Kaviar was created around balance. The first impression is the roe itself: fresh, delicate and gently saline. The pearls provide their characteristic soft resistance before releasing their flavour. Then comes the smoke. It is intentionally understated.
Rather than competing with the roe, it creates another layer — warm, aromatic and distinctly Nordic. This makes Niklas Kaviar equally at home served simply on its own or incorporated into more elaborate dishes.
It can provide the centrepiece or the final accent. The defining characteristic remains the same: the roe comes first; the smoke follows.
Its character comes from a combination of Finnish ingredients, Finnish craftsmanship and a culinary culture shaped by water, forests and dramatic seasons. Finnish cooking has traditionally relied less on elaborate preparation and more on preservation, curing, salting and smoking.
These techniques were born from necessity but became part of the country’s culinary identity. Niklas Kaviar takes those traditions and presents them in a contemporary form.
Finland is not simply our place of production. It is the idea behind the product.
Niklas Kaviar is produced through a carefully controlled artisanal process in Finland. The roe is selected, prepared and gently cured before receiving its characteristic smoke-sauna finish. Attention at each stage matters because roe is an exceptionally delicate ingredient.
Texture can be damaged through unnecessary handling; too much salt can dominate its natural flavour; too much smoke can overwhelm it completely.
Our process therefore depends as much on restraint as technique. We believe craftsmanship should be noticeable in the result rather than advertised through unnecessary complexity.
